INTRODUCTION
Sodium nitrite, an inorganic compound, is a white or slightly yellow crystalline powder with a special odour, easily soluble in water, slightly soluble in ethanol, methanol and ether. It has a variety of applications in industry, such as the manufacture of azo dyes, used as a mordant for fabric dyeing, bleaching agent, metal heat treatment agent. At the same time, it is also used as a food additive, mainly used in fish and meat preservation and colour enhancement, but also can inhibit the growth of bacteria to a certain extent, and play a preservative role.
However, it should be noted that sodium nitrite is toxic, and a one-time intake of 0.2\~0.5g may produce symptoms of poisoning, and a one-time consumption of more than 3g may result in death. In addition, in the process of food preparation or metabolism in the body, sodium nitrite may produce amine nitrite, a carcinogen, which may be carcinogenic when used in excess for a long period of time.
Special care is also needed for the storage and handling of sodium nitrite. In the event of a spillage, the contaminated area of the spillage should be isolated, access restricted and appropriate protective equipment worn. Also, contact with reducing agents, organics, flammables or metal powders should be avoided. In case of inadvertent ingestion or contact, seek immediate medical attention or take appropriate first aid measures.

PROTECTION
Production personnel shall wear masks to prevent inhalation of sodium nitrate dust during work and protect respiratory organs: wear work clothes and latex gloves to protect skin.
Workers should wear chemical safety glasses, adhesive tape anti-virus clothes and rubber gloves.
If the skin comes into contact with sodium nitrite, please take off the contaminated clothes and wash the skin thoroughly with soapy water and clean water. If you accidentally inhale sodium nitrite, leave the site quickly to a place with fresh air. Keep the respiratory tract unobstructed.
